Ingredients:

RICE:
1/2 cup uncooked Rice
1 cup Water
1 cup cooked Black Beans or Pinto Beans
2 Onions, slcied
4 cloves Garlic
1 Green Pepper, diced
1/2 Red Pepper, diced
Juice from 1 Lemon
3 tsp Cumin
1 tsp Chili Powder
1/2 tsp Coriander
2 tsp Sea Salt
1/2 tsp Black Pepper

GUACAMOLE:
2 Avocadoes
1 clove Garlic
3 Tbsp Red Onion
1 Tbsp Cilantro
Juice from 1/2 Lemon
1/2 tsp Cumin
1/2 tsp Sea Salt

SALSA:
2 Roma Tomatoes, diced
3 Tbsp Green Pepper, diced
3 Tbsp Red Onion, finely diced
2 Tbsp Cilantro, chopped
1 Tbsp Rice Vinegar
Juice from 1/2 Lime
1 small Mango
1/2 Tbsp Jalapeno, finely diced (optional)
1/2 tsp Sea Salt

CASHEW CREAM SAUCE:
1/2 cup Raw Cashews (soak in water overnight)
1/2 small Red Pepper
Juice from 1/2 Lemon
2 Tbsp Onion
1 clove Garlic
1/2 tsp Sea Salt
