Taco Salad in a Tortilla Bowl

Ingredients:
4 Tortillas
RICE:
1/2 cup uncooked Rice
1 cup Water
1 cup cooked Black Beans or Pinto Beans
1 Tbsp Vegetable Oil of choice
2 Onions, sliced
4 cloves Garlic
1 Green Pepper, diced
1/2 Red Pepper, diced
Juice from 1 Lemon
3 tsp Cumin
1 tsp Chili Powder
1/2 tsp Coriander
2 tsp Sea Salt
1/2 tsp Black Pepper
GUACAMOLE:
2 Avocadoes
1 clove Garlic
3 Tbsp Red Onion
1 Tbsp Cilantro
Juice from 1/2 Lemon
1/2 tsp Cumin
1/2 tsp Sea Salt
SALSA:
2 Roma Tomatoes, diced
3 Tbsp Green Pepper, diced
3 Tbsp Red Onion, finely diced
2 Tbsp Cilantro, chopped
1 Tbsp Rice Vinegar
Juice from 1/2 Lime
1 small Mango
1/2 Tbsp Jalapeno, finely diced (optional)
1/2 tsp Sea Salt
CASHEW CREAM SAUCE:
1/2 cup Raw Cashews (soak in water overnight)
1/2 small Red Pepper
Juice from 1/2 Lemon
2 Tbsp Onion
1 clove Garlic
1/2 tsp Sea Salt

Tortilla Bowl
Begin by forming the tortilla bowls. Lightly rub oil over one side of the tortilla (important step, so it doesn’t stick). There are a few methods to do this. The simplest way for gluten free tortillas that break easily is to place the tortilla inside a springform pan. Form it into a bowl shape and use binder clips to hold it in place and keep the tortilla from collapsing inward. Cook in a heated 350° oven for 10 minutes, then remove from the bowl, and place it back in the oven, on its own for 5 more minutes. Times may vary as some tortillas are thinner, so check on them periodically. -
For the rice:
Cook the rice while you prepare the other ingredients.
Saute onions in oil in pan until translucent. Add garlic and cook a couple minutes. Add peppers and cook for 5-10 more minutes. Add spices, lemon and black beans. Adjust seasoning to taste. -
For the guacamole:
Mash the avocados in a bowl with a fork. Mix in the remaining ingredients. Boom! Done. -
For the salsa:
After everything is chopped, toss it in a bowl and adjust to your liking. -
For the cashew cream sauce:
Toss all ingredients in a food processor and blend. You may need to add a little water to get it fully incorporated. -
Assembly:
Place shredded lettuce in bottom of tortilla bowl. Layer with rice mixture. Then add salsa, guac and cashew sauce. Top with tofu, cheese, whatever you like. Enjoy!
